Marvel recently passed away and her daughter, Marnelle a dear friend, found this recipe hand written and faded on a small piece of paper. A true treasure . . .
Ingredients for pie
1 large onion
1.5 lb ground beef (or your choice)
1 10.5 oz. can condensed tomato soup
1 tsp salt
1/2 tsp black pepper
3 TB chili powder
3/4 c chopped olives (black)
12 oz can corn
Ingredients for cornmeal topping
sift:
1/2 cup flour
1 tsp. salt
1 tsp. baking powder
1/2 tsp. baking soda;
Then add 3/4 cup of cornmeal and mix.
Then add 1 cup buttermilk, (I used the powdered stuff in baking aisle, adding water--you keep in fridge after opening and it lasts forever)
1 beaten egg,
2 TB canola oil (I like safflower as it's not poison)
Brown onion and meat, add the rest, pour into greased casserole and cover. Bake 325 deg. for 1.5 hours. Spread corn mixture on top and bake 425 for 25 mins.
I would also suggest having cheese and cilantro to top once you serve, and perhaps add some fire-roasted chilies to the recipe.
*Feel free to substitute her "canned" stuff for fresh. It's old, but scrumptious recipe!!
