Chef John's Cauliflower Pizza

Cauliflower crust Pizza lifesaver if you are on a low-carb or keto diet and will help curb your carb cravings! It’s also naturally gluten-free and can be made vegan by simply replacing the cheese with your favorite alternative. But these recipes contain cheese, lots of cheese!!


INGREDIENTS

1 small to medium sized head of cauliflower - should yield 2 to 3 cups once processed

1/4 cup shredded Parmesan cheese

1/4 cup mozzarella cheese

1 egg

1/4 teaspoon salt

1/2 teaspoon

1/2 teaspoon basil or rosemary minced (or dry) or oregano minced (or dry)

1 cup marinara sauce, Alfredo or homemade pesto sauce

1-2 cups mozzarella cheese



Add your favorite toppings such as chicken, beyond meat, mushrooms, jalapeno, onions, artichoke, bell pepper, olives or use your imagination.


The crust is made of cauliflower, cheese, and eggs and from there, you can customize the pizza any way you like to create your favorite ingredients. Because this is Cauliflower Pizza healthier ingredients should apply.

Remove the stems from the cauliflower and cut into chunks, Place the cauliflower into a food processor and pulse it until it resembles the texture of rice. If you don't have a food processor, you can use a cheese grater or chop it very finely.





After mincing the cauliflower in a food processor, place on a cookie sheet with parchment paper, bake at 350 for 20 minutes and you see steam coming out of it.











After removing it, cool for at least 15 minutes, then place the cauliflower in a kitchen towel, cheesecloth or an apron and squeeze away excess liquid. Make sure to get all the water out of it, like every last bit!













Now place the cauliflower ball in a bowl and add an egg, 1/4 cup Parmesan cheese, 1/4 mozzarella cheese, salt, garlic powder and (optional) rosemary, oregano or your favorite herbs. Mix it all in with a wooden spatula or your hands until a dough forms.













Spread the dough out on a lightly greased parchment paper or a pizza pan like you would with regular pizza dough and mold it into your favorite shape (round, square or a heart).

Bake the crust at 475 degrees F for 10-15 minutes or until you begin to see that nice and golden color from around the edges.







Remove the crust from the oven and add your toppings. Below are examples of what Chef John used as toppings, but use your favorites by all means . . . and cook for an additional 10 minutes or until your cheese topping is melted.


Cauliflower crusted Margherita Pizza.

Additional Ingredients: Roma Tomato, Fresh Basil and Your Favorite Italian Cheese.













Cauliflower Crusted Mexican Style pizza. Additional Ingredients: Spicy Marina Sauce, Mexican Cheese Blend, Cilantro and Jalapeño (optional).













Alfredo Cauliflower Pizza.

Ingredients: Alfredo Sauce, Misc. Cheeses, Caramelized Onions and Sautéed Mushrooms topped with Fresh Basil.
